KIDONI (QUINCE)

Ingredients

4               Quinces
1cup         Sugar
1 tin          Coca-cola
1 glass      Mavrodaphne, or other similar
semi-sweet wine
1tsp          Cloves
6               Cinnamon sticks
2               Lemons, zest, and lemon juice

Method

Peel each quince, cut into quarters, remove seeds, and set aside.

Place quinces into a bowl, add lemon juice, and enough water to cover them.  This is the bath for the peeled quinces to keep them from turning brown.

When you ready to continue, take quinces from the bowl and place them into a saucepan together with sugar, water, lemon zest, seeds, cinnamon sticks, and cloves.  The liquid should reach at least ¾ the way up the fruit.  Boil covered for 10 minutes.  The fruit should begin to soften but should not be too soft.

Take parboiled fruit out and place it into a pan large enough to hold all the fruit.  Add coca-cola, wine, and enough juices just to cover ½ the way up the fruit.

Place a clove into each piece of fruit.  Bake at 375 ˚ for 20 minutes until fruit is soft.
